To make chicken menudo you will need the following ingredients.

Chicken: Use 1.5 or 2 pounds of boneless chicken thighs and legs.

Hot dogs: In Menudo, we traditionally use pork liver slices. I replace the shredded hotdogs in Chicken Vision with the family dish because the good meat adds a smoky layer of flavour and adds to the flavour of the serving.

Onion: on a large onion finely chopped.

Garlic: Take three cloves of garlic chopped.

Carrot: Take a large carrot chopped.

Potato and peas: Take a large-sized potato and half a cup of peas.

Pineapple juice: I like to braise the chicken in the gravy for a nice crispy taste.

Tomato paste: Tomato paste is used to make sauce.

Soy sauce: soy sauce uses two tablespoons.

Spices: use two tablespoons of vinegar salt and pepper to taste.

Vegetables: Potatoes, carrots, peas and bell peppers add colour and nutritional flavour.

Water: Add  water as needed consistency

1. Heat oil in a large pot or a deep pan over medium heat.

2. Sauté minced garlic and diced onions until they become fragrant and translucent.

3. Add chicken cubes or strips to the pot and cook until they turn brown on all sides.

Add soy sauce and pineapple juice.

5.        Add diced tomatoes, tomato paste, and water. Stir to mix and bring to a boil season with salt and pepper to taste. Lower heat, cover, and cook until chicken is tender.

6.        Add potatoes, carrots, and raisins and cook until tender.

4. Pour tomato sauce into the pot and stir well to coat the chicken pieces.

5. Add soy sauce, Worcestershire sauce, and chicken broth to enhance the flavour. Stir everything together.

6. Season with ground black pepper, paprika, salt, and sugar according to your taste preference.

Here’s how to make chicken menudo

Step: 1 If you use a different protein, the chicken can be substituted with pork, beef or even tofu for a vegetarian version.

Step: 2 If you don’t have carrots, you can use other root vegetables like sweet potatoes or parsnips.

Step: 3 Instead of potatoes you can use yam or butternut squash for a sweeter taste or leave it out if you like.

Step: 4 If peas are not available, you can use corn on the cob or chopped zucchini.

Step: 5 If you don’t have bell pepper available, try using other vegetables like eggplant or green beans.

Step: 6 For those who are gluten intolerant or don’t like soy sauce, you can use coconut afllanos or chutney as a substitute for soy sauce. These variations provide similar flavours without the gluten content.

•          Add 2 tablespoons canola oil

•          Add red bell pepper, cored, seeded and cut into cubes

•          Add green bell pepper, cored, seeded and cut into cubes

•          Add 5 hot dogs, sliced thinly on a bias

•          1 onion, peeled and chopped

•          4 cloves garlic, peeled and minced

•          3 pounds boneless, skinless chicken thigh meat add the pan

•          2 tablespoons soy sauce

•          ½ cup pineapple juice

•          1 can (14.5 ounces) diced tomatoes

•          ¼ cup tomato paste

•          1 cup water

•          salt and pepper to taste

•          2 large potatoes, zest and cut into cubes

•          2 large carrots, zest and cut into cubes

•          2 tablespoons raisins

Instruction

1: Take a large pan, add one tablespoon of oil and heat it on medium flame. Add bell pepper and cook until crisp, thirty seconds.

2: Add the hot dogs to the pan. Cook until lightly browned, then remove from the pan and place on paper towels.

3: Take a sponge pan and put a tablespoon in it. After the oil is hot, add onion and garlic and cook until soft.

4: Add chicken and cook until lightly browned.

5: Add soy sauce and pineapple juice and cook for about one minute.

6: Add chopped tomatoes and water and stir to combine.

7: Add salt and pepper to taste and cook for 25 minutes until the chicken is tender.

8: Add potatoes, carrots and raisins. Cook until soft.

9: Add bell peppers and hot dogs and cook until.

10: Pepper can add additional salt if needed.
