make chicken menudo you will need the following ingredients.
Chicken:
Use 1.5 or 2 pounds of boneless chicken thighs and legs.

the flavour of the serving.

Here’s how to make chicken menudo
Step: 1
If you use a different protein, the chicken can be substituted with pork, beef
or even tofu for a vegetarian version.
Step: 2
If you don’t have carrots, you can use other root vegetables like sweet
potatoes or parsnips.
Step: 3
Instead of potatoes you can use yam or butternut squash for a sweeter taste or
leave it out if you like.
Step: 4
If peas are not available, you can use corn on the cob or chopped zucchini.
Step: 5 If
you don’t have bell pepper available, try using other vegetables like eggplant
or green beans.
Step: 6
For those who are gluten intolerant or don’t like soy sauce, you can use
coconut afllanos or chutney as a substitute for soy sauce. These variations
provide similar flavours without the
gluten content.
